Planting Tomatoes with a Side of Guac

Last week we got the first of our cherry tomatoes transplanted into the field. To prepare our field we use our Grillo walking tractor to rototill the soil and incorporate all the remaining dried plant material that remains from having it covered with a tarp. Then we use a wheel hoe to mark the beds, and next we walk the beds with rakes to shape the beds. We apply amendments and fertilizer to each bed that we have measured and mixed ahead time in 5-gallon buckets. The beds then get covered with kraft paper, aka crab paper. Each bed is topped with drip tape irrigation and then the cherry tomatoes are transplanted. Our beds are 100 feet long so we can fit 50 tomato plants per bed. The final step is covering all the beds with straw.

This week we had hoped to get all our heirloom tomatoes transplanted but bed prep and planting are dependent on the weather. So with a couple of rainy days this week we will only begin to get the beds ready and the actual transplanting will have to wait until next week.

When the weather is not great for planting outside we spend time in the greenhouse starting seeds and potting up plants from tiny cell trays to 3″ pots. Right now our greenhouse is filled with spring and summer seedlings. We have loads of different tomato seedlings, 10 cherry varieties and 15 heirloom varieties. At the Easton farmers’ market this week our taco special will be our Denver Taco: chopped ham, diced sweet peppers and onions with fluffy scrambled eggs served on a warm corn tortilla and garnished with pico de gallo. It is our version of the classic Denver omelet.

Each week we make a huge bowl of guacamole as we are getting ready for the market. On an average week it is a case worth, which is about 48 avocados. At the market you can add a small side of guacamole to any taco or quesadilla. You can also grab a half pint (8oz) or pint (16oz) to take home. And if you are planning to feed a crowd or just really love guacamole, like we do, you can pre-order a quart (32oz) of guacamole. If you have not tried our guacamole yet we highly recommend you do, it is the stuff of dreams! Our guacamole is made from ripe avocados, fresh cilantro, hand squeezed lime juice, and kosher salt; that’s it, we don’t use any fillers. No preservatives are used, so it must be kept refrigerated and it will last about a week in the fridge if you don’t happen to eat it all immediately after purchasing it.
