Garlic Giants, Tangy Tomatillos, and Biodiversity

Mid-August on the farm is when the produce really shows off. Tables at the Easton farmers’ market are overflowing with vibrant color: juicy tomatoes, bright tomatillos, and baskets of fresh garlic.

This week we’re especially excited to share two standout garlic varieties now available in our online shop:
Elephant Garlic – The Gentle Giant. Despite its size, elephant garlic is technically part of the leek family, which gives it a much milder, more subtle flavor. Perfect for roasting whole or stirring into mashed potatoes for a delicate savory note.

Pyong Yang Garlic – The Fiery Favorite. A bold, hardneck variety that brings the heat. Raw cloves pack a spicy punch that builds with intensity, but cooking mellows the flavor into a nutty richness that garlic lovers treasure.

Pair either variety with our fresh tomatillos, which are at peak season right now. Their tangy, citrusy flavor makes them a summer kitchen essential whether you’re blending salsa verde, roasting them for sauces, or simply enjoying them along with other vegetables in your favorite dish.

Speaking of tomatillos, this week’s market special is Roasted Tomatillo Quesadilla. We slowly roast tomatillos with garlic and onions until they’re bursting with flavor, then tuck them into a warm flour tortilla with melty cheese, finishing it off with a dollop of pico de gallo. It’s rich, tangy, and deeply satisfying, perfect for summer brunch at the market.

Life Around the Harvest

While the bounty is always front and center in August, farming isn’t just about crops, it’s also about the surprises that pop up in the field and greenhouse.

The Asparagus Beds: We planted new asparagus this spring, and the young plants are settling in nicely. But weeds were settling in too, some shooting up three feet tall before we finally got in there with a good weeding session. It’s one of those big jobs that feels overwhelming until you start (with the help of a good crew), and then every cleared foot feels like a small victory. The Butterfly in the Greenhouse: One quiet morning, we noticed a cocoon attached to our potting bench. By the time the sun warmed the greenhouse, a butterfly had emerged, drying its wings before flying off. A reminder that the greenhouse grows more than just plants, it’s a home for transformation, too.

A Turtle in the Tomatoes: And then there was the little box turtle we found napping in the heirloom tomato beds. Tucked under straw mulch and vines, it blended in so well we nearly missed it. The farm may be our workplace, but to critters like this, it’s also a sanctuary for biodiversity.
