🍲 Cozy Yet Light: Oven-Roasted Tomato Soup
Last Sunday’s rain gave us the perfect excuse to make something warm but not heavy: Oven-Roasted Tomato Soup. Using tomato seconds and heirloom garlic from our fields, plus onions, we roasted everything until sweet and caramelized, then blended it into silky perfection.
This recipe is perfect for September, when you want comfort food without saying goodbye to summer flavors.



Oven-Roasted Tomato Soup Recipe
Makes about 2 quarts
Ingredients
- 3 lbs heirloom tomatoes, chopped
- ½ large yellow onion, chopped
- 5 garlic cloves, peeled whole
- 1 TBS oil (for high heat roasting)
- 2 tsp dried oregano
- 1 tsp celery seed
- ½ tsp cumin
- ½ tsp kosher salt
Instructions
- Preheat the oven to 425°F. Spread oil on a large baking sheet.
- Place tomatoes, onion, and garlic evenly on the sheet. Sprinkle them with oregano, celery seed, cumin, and salt.
- Roast for 45 minutes, until vegetables are soft and onions lightly charred.
- Cool for 15 minutes. Transfer vegetables and pan juices to a blender. Puree until smooth and creamy. Season with salt and black pepper.
- Pour into a saucepan and simmer for at least 15 minutes to reheat.
Serve with your favorite garnish: basil, cilantro, avocado, or crispy garlic. It pairs beautifully with a warm quesadilla.

This Saturday, September 6th at the Easton farmers’ market, we’re cooking up something you won’t want to miss:
Heirloom Tomato Garlic Scape Pesto Quesadilla
We spread our housemade garlic scape pesto (made with garlic scapes, spinach, parmesan, walnuts, and olive oil) on a flour tortilla, add cheese and thick heirloom tomato slices, then grill until golden. Each quesadilla is finished with our fresh pico de gallo for even more tomatoes.
It’s summer flavor at its best: cheesy, juicy, tangy, and absolutely worth standing in line for.
